Starting out with a mobile wood-fired oven and quickly realizing that he wanted to open a restaurant, Derek Tung used social media to reach out to Paulie G to ask him for some advice. That advice turned into the opening of the first Paulie G’s in Chigaco and Derek’s career as a restaurant owner.
